Abstract
Upacara minum teh merupakan tradisi etnis Tionghoa yang menarik untuk diteliti. Penelitian ini dilakukan di Pantjoran Tea House, sebuah rumah makan khas masakan otentik Tiongkok yang menyediakan menu upacara minum teh gongfu cha, di kawasan pecinan Glodok, Jakarta. Metode peneliatian yang digunakan yaitu metode analisis deskriptif kualitatif dengan teknik pengumpulan data melalui, kajian literatur, observasi langsung serta wawancara dengan manajer pemasaran, spesialis teh dan pengunjung dari Pantjoran Tea House. Hasil dari penelitian ini adalah terdapat beberapa aspek penting yaitu jenis teh yang digunakan, teknik penyeduhan dan suhu air yang digunakan, serta alat dan teknik penyajian. Jenis teh yang digunakan di Pantjoran Tea House yaitu teh berkulitas meliputi Flower tea, White tea, Green tea, Oolong tea, Red tea, dan Pu er tea. Untuk mendapatkan aroma teh terbaik, teh jenis Flower tea, White tea, Green tea diseduh dengan air bersuhu 70-75?C, Oolong tea diseduh dengan air bersuhu 80-85?C, Red tea, dan Pu er tea diseduh dengan air bersuhu 90-100?C. Upaya yang dilakukan Pantjoran Tea House untuk menjaga keotentikan penyajian Gongfu Cha, yaitu memberikan pelatihan rutin untuk tea specialist, selalu menggunakan teh pilihan, serta memberikan pelayanan terbaik bagi pengunjung.
