Abstract
Sisa makanan merupakan bagian dari makanan yang biasanya dibuang dan dianggap sampah. Buah durian memiliki sisa makanan berupa biji-bijian yang tidak bisa dikonsumsi langsung. Namun karena faktor kemajuan di bidang teknologi pangan, biji durian dapat diolah menjadi sesuatu yang bermanfaat, contohnya tepung biji durian. Penelitian ini bertujuan untuk melihat apakah tepung dari sisa makanan buah durian dapat digunakan dalam pembuatan makanan berupa cookies. Metode penelitian yang digunakan adalah Rancangan Acak Lengkap (RAL) dengan tujuan memberikan hasil perlakuan secara acak dari berbagai jenis unit eksperimen. Hasil percobaan ini menunjukkan bahwa tepung biji durian dapat digunakan sebagai pengganti tepung terigu, namun pada taraf tertentu tepung biji durian dapat menghasilkan rasa asam yang kuat.
