Abstract
Dalam pembuatan produk pastry, telur sering digunakan, dimana kelemahan telur adalah bersifat bulky dan rapuh saat dibawa, serta masa penyimpanan yang singkat membuat penggunaan telur menjadi tidak efisien. Namun, terdapat cara alternatif pengganti telur, yaitu dengan menggunakan biji selasih dan biji chia. Biji selasih (Ocimum Basilicium linn) dan biji chia (salvia Hispanica) merupakan biji yang mengembang dan dapat membentuk gel jika terendam dalam air. Karakterisitik ini sangat mirip dengan telur, sehingga berpotensi menjadi pengganti telur. Penelitian ini membahas proses pembuatan banana cake dan metode pengumpulan data. Hasil data menunjukkan bahwa sebagian besar responden menyukai BNC 3 yang terdiri 50% biji selasih dan 50% biji chia untuk menggantikan 100% telur yang digunakan. Hasil penelitian juga menunjukkan bahwa tidak ada perbedaan antara rasa, tekstur, dan aroma. Namun terdapat perbedaan warna antara BNC 3 dan BNC kontrol. Namun selain itu, tidak ada perbedaan signifikan lainnya.
