Abstract

Tujuan dari penelitian ini adalah untuk mengetahui strategi Gultik Pak Kumis Blok M dalam mempertahankan eksistensi selama 39 tahun, perubahan resep dan proses pembuatan Gule, serta seberapa besar dampak pemberlakuan kebijakan pemerintah selama pandemi Covid-19 terhadap omzet penjualan Gultik Pak Kumis Blok M. Penelitian ini menggunakan metode kualitatif dengan meggunakan teknik pengumpulan data wawancara. Gultik Pak Kumis selalu menjaga kualitas produk dengan menjaga konsistensi rasa. Adapula penambahan bumbu pada resep seperti kayu masohi, ebi dan kacang mede agar rasa gule makin enak. Penurunan omzet yang dialami Gultik Pak Kumis sangat signifikan hingga 50% dari penjualan normal.
