Abstract
Nusa Indonesian Gastronomy adalah restoran fine dining yang menyajikan masakan Indonesia yang berlokasi di Kemang, Jakarta Selatan dan didirikan oleh Chef Ragil Imam Wibowo dengan visi dan misi untuk memperkenalkan keragaman masakan Indonesia. Nusa Indonesian Gastronomy menerapkan praktik gastronomi untuk meningkatkan cita rasa dan penyajian masakan Indonesia dengan tujuan tunggal untuk mengubah cara pandang masyarakat terhadap masakan otentik Indonesia yang sudah umum dikenal. Metode yang digunakan dalam mengumpulkan informasi yang dibutuhkan untuk laporan ini adalah pendekatan kualitatif dengan mewawancarai nara sumber terkait. Dengan situasi pandemi saat ini, mereka telah menerapkan beberapa metode untuk mempertahankan bisnis seperti menggabungkan Warung Pasta dan Locarasa serta metode makan baru di mana tamu harus melakukan reservasi terlebih dahulu.
