Abstract
Desa Ngaliyan telah menjadi saksi tempat pertama pembuatan emping melinjo sejak seabad yang lalu. Desa Ngaliyan sendiri terletak di Kecamatan Limpung, Kabupaten Batang. Saat ini 70% masyarakat Desa Ngaliyan berprofesi sebagai petani melinjo dan memiliki kemampuan membudidayakan melinjo hingga menjadi emping. Dokumentasi ini bertujuan untuk memberikan informasi mengenai proses pembuatan emping melinjo kepada 87 responden berbasis Google Forms dengan mayoritas 90% responden berusia milenial. Dengan hasil 100% responden, 73,6% responden tidak mengetahui asal muasal emping melinjo dan 80,5% responden tidak pernah melihat proses pembuatan emping melinjo. Pembuatan emping terbagi menjadi beberapa proses. Prosesnya dimulai dari memanen melinjo kemudian melinjo di ongseng hingga berwarna kecoklatan setelah itu biji melinjo akan terlepas dari kulitnya. Proses dilanjutkan dengan proses pembentukan emping, melinjo akan dipukul dengan besi seberat 3-4 kilogram. Proses terakhir pembuatan emping di desa Ngaliyan adalah dengan menjemur melinjo pada siang hari di bawah terik matahari. Terakhir, emping melinjo akan dikemas untuk dijual.
